Four Thousand Islands, Laos

November 15, 2016

In the most southern reaches of Laos, this often forgotten country or at least under explored is the Mekong archipelago which borders Cambodia. Known locally as Si Phan Don, to foreigners the Four Thousand Islands. Life goes by at a slower pace here for both the locals and travelers. Bolaven Plateau Motorcycle Loop – Take the Ride

July 27, 2015

Kai Jiao Muu Sap is a Thai omelette with ground pork. These are often a bit greasy as they are more or less shallow fried in a wok, but it's a simple combo of pork and eggs. Often times it is seasoned with fish or soy sauce, black pepper, garlic and maybe a splash of vinegar. They have a crispy outside while the inside is fluffy and of course served up on some rice. I'd generally add prik naam bplaa (chili fish sauce) and a chili sauce over top. It's a good day! .
